Extra Virgin Olive Oil has a higher smoke point than you might think
Most people say that extra virgin olive oil is unsuitable for cooking due to the perception that its smoke point is low: it is the temperature at which fizzy oil stops and starts smoking. The smoke point is also the temperature at which unwanted aromas and unhealthy compounds can form. But guess what? EVOO doesn’t really have a low smoke point!
In fact, most studies show that the smoke point of extra virgin olive oil is between 350⁰ and 410⁰ F, which covers most types of cooking. The reason EVOO has a smoke point range based on a certain number is that the smoke point depends on the free fatty acid (FFA) composition of the oil – the lower the pH, the higher the smoke point.
